Chanterelles

Our friend took us out chanterelle hunting for the first time on Saturday. We were supposed to go truffle hunting Saturday morning, and I had been looking forward to it since June, but we needed to attend to Camilla. They didn't have much luck we found out later, so we didn't miss out. But chanterelle hunting was excellent! We were sworn to secrecy on the location, because it is a good spot. We got over 4.5 pounds in about an hour.

I think they are gorgeous. We also found some white chanterelles, they look very similar but tend to be meatier than the yellows. I had a great time hunting for them, I can't believe it took me so long to try it!


Tonight I chopped them up.


Sauteed them in butter with shallots, added a little cream, white wine, salt and pepper. Then put it on pasta with Parmesan, it was delicious!

WOW! Hunting for them sounds fun and I am sure it makes your meal taste even better. Looks yummy!
