It's the Most Wonderful Time...

The pace of fall is so much nicer than summer. The garden has slowed down, but is still producing a ton, the air has cooled off so canning and baking actually sounds appealing. I'm finding a nice rhythm to these beautiful fall days.


Our bell peppers are doing great. I'm getting ready to make these roasted red peppers.
The tomatoes have slowed down quite a bit, this was the last big picking I think, from yesterday. Also do you see those MELONS?! I grew those!


This was one of the best cantaloupes I've ever eaten, although it was pretty small. We polished it off in about 3 minutes.


I decided to do one batch of canned tomatoes. We have some from two years ago I never used. I'm not sure why, just not in my routine. I found this recipe for canned tomatoes and used her method. I diced them up, cooked them down a bit and then canned using a Roma Cone that Aaron got from our neighbor's free pile on the corner one day. I loved it for this. I can't find a picture online, but it's just a canning funnel - is that what they are called? So easy, you don't even have to wipe the rims before placing the lids.


This is how they turned out. I was hoping that by heat packing they wouldn't separate, but they still did. Ah well.


Mostly we've been doing this with the tomatoes: (My post from last year) We did it just a little different this year, using olive oil, garlic, garlic powder, onion powder, salt, pepper and basil).


Our freezer is looking good for sauce this year!


We've been eating lots and lots of BLTs. Mmm, our favorite go to/use up the tomatoes meal.


I canned up some pickled beets...I'm super excited to try these! Have I mentioned that I LOVE beets?!


Our canned food supply is looking awesome! I wish I had kept track of numbers (story of my life), but there are apricots, cherries, all kinds of jam, tomatoes, pickles, peaches, and green beans. I think we are going to skip applesauce and pears this year because we have enough from last year. That was the goal with my crazy huge numbers - be able to alternate years and not have to do everything every year.


We are currently making this lemon ice cream. I'm pretty excited about it...it was compared to our favorite ice cream Haagen Dazs Lemon Five.

those tomatoes are just gorgeous! i totally had forgotten about your tomato sauce recipe. i just added it to my "in the kitchen" board on pinterest so i'd remember to make it :)

your pantry looks fabulous as well. all that color - so pretty (and i bet, so tasty!).

I wish I had your pantry of food! I love it!!

I think the only thing I'm doing this year is applesauce, and possibly canned pears. And That's only if I get super motivated! lol

Yes, I drool over your pantry! I still have pickled beets from the first time I did them, I never know what to use them for. I forgot about your sauce too, I'm so glad you posted about it again, I have to do that! I wish Bj would get behind my canning plans, it would be a lot more fun not to have him rolling his eyes at me! I was happy to get a bunch of applesauce done, so if you do run out you can have a jar of my pink stuff, it's so yummy! Thanks for your help. I love having a canning hotline :)
