Dinner

I don't know why it's so interesting to see what other people eat, but I'd like to do a week in the life "food" edition. I'm not sure when I'll actually do that, but for now I'll share our dinner. It's getting to that time where the garden is winding down and we're really appreciating when we can eat fresh everything we have grown.
I planted two eggplants. We got two tiny eggplants, one from each plant. I think I must have put them out too early and they got stunted. Anyway I made our two tiny eggplants into eggplant parmigiana. That's really enough eggplant for me in a year anyhow.


I made these cookies modified - I left out the chocolate chips (not a big fan) and followed one commenter's advice to substitute one cup of flour for ground up oatmeal. They are delicious. I wanted to make ice cream sandwiches with the ice cream we made a few days ago. I highly, highly recommend this recipe. We also made vanilla bourbon ice cream from the same base - so good.
