Pioneer Soup

Pioneer Woman posted this soup today and I decided to make it for dinner. She raved about it - and it is pretty good. I couldn't find low sodium beef broth, so I used 4 cups of beef broth and 3 cups of low sodium chicken broth. It turned out perfect.


It took a while to make, mainly because I had to do the meatballs in 3 shifts, but it was worth the wait. Off to school tomorrow to do some things I never have time to do when I actually have school. Tomorrow night teaching cub scouts how to brush - I'm kind of nervous. I don't know what we will talk about the whole time, hopefully they are nice kids.

Don't be nervous, they should still be at the age that thinks learning is cool, maybe you can make a game out of what you are teaching or have prizes to hand out, or maybe you should show them some meth teeth and scare them into good dental hygiene :)

I totally want to try that. I need to try more soups, and the kids will love that one because of the meatballs.
